- 1 lb red potatoes

- 1–2 cups shredded cheddar or Colby Jack cheese
- 1 cup chopped lettuce or mixed greens
- 1 small onion
- diced
- 1–2 tablespoons olive oil
- Salt and black pepper

- ½ cup mayonnaise
- ¼ cup ketchup
- 1 tablespoon yellow or Dijon mustard
- ½ teaspoon Cajun seasoning (adjust to taste)
- Pickles
- Extra lettuce
- Fresh parsley (for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and toss the diced red potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20–25 minutes until crispy.
- While the potatoes roast, form the ground beef into small patties. Season with salt and black pepper.
- Heat a skillet over medium-high heat and sear the burger patties for about 3-4 minutes on each side until cooked to your liking.
- In a bowl, mix together the mayonnaise, ketchup, mustard, and Cajun seasoning to create the special sauce.
- To assemble the bowls, layer the chopped lettuce or mixed greens at the bottom, followed by the roasted potatoes, burger patties, cheese, and a drizzle of the special sauce.
- Top with additional toppings like pickles, extra lettuce, and parsley for garnish, then serve immediately.
