Description
Juicy seasoned hamburger steaks are seared until golden and then simmered in a rich homemade onion gravy. This comforting Southern-inspired dinner is perfect with mashed potatoes, roasted vegetables, or crusty bread.

For the Hamburger Steaks:
- 1½ lb ground beef (80% lean)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- ½ tsp smoked paprika
- 1 tbsp Worcestershire sauce
- 1 tbsp olive oil
For the Onion Gravy:
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced (optional)
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- ½ tsp dried thyme
- ½ tsp black pepper
- ¼ tsp salt, or to taste
- 1 tbsp butter or olive oil
- 2 tbsp fresh parsley, chopped, for garnish
Instructions
- In a large bowl, gently combine the ground beef, salt, pepper, garlic powder, smoked paprika, and Worcestershire sauce. Avoid overmixing.
- Divide the mixture into 6 portions and shape each into a patty about ¾ inch thick.
- Heat the olive oil in a large skillet over medium-high heat. Add the hamburger steaks and sear for 3–4 minutes per side, until nicely browned. Remove from the skillet and set aside.
- Reduce the heat to medium. Add the butter or olive oil, followed by the sliced onions and mushrooms if using. Cook for 5–7 minutes, stirring occasionally, until the onions are soft and lightly caramelized.
- Add the minced garlic and cook for about 30 seconds.
- Sprinkle the flour over the vegetables and stir continuously for about 1 minute to cook out the raw flour taste.
- Slowly pour in the beef broth while stirring constantly to prevent lumps.
- Stir in the Worcestershire sauce, thyme, and black pepper. Bring the gravy to a gentle simmer and cook for 3–5 minutes until it begins to thicken.
- Return the hamburger steaks to the skillet, spooning the gravy over the patties.
- Cover and simmer gently for 8–10 minutes, or until the steaks are cooked through and reach an internal temperature of 160°F (71°C).
- Taste the gravy and adjust the salt and pepper as needed. Garnish with fresh parsley and serve hot.
Notes
- Use 80% lean ground beef for the best balance of flavor and juiciness.
- Avoid overmixing the beef mixture, which can make the patties tough.
- Freshly sliced onions create the best flavor in the gravy.
- For thicker gravy, simmer a little longer or add a slurry made with 1 tsp cornstarch and 1 tbsp cold water.
- For gluten-free hamburger steaks, use gluten-free flour or cornstarch and certified gluten-free beef broth and Worcestershire sauce.
- Ground turkey or chicken can be substituted for the beef, although the flavor and texture will be different.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a skillet over low heat with a splash of beef broth to loosen the gravy.
