- 8 ounces cream cheese softened to room temperature
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the baking powder, baking soda, salt, ground cinnamon, pumpkin pie spice, and mix well.
- Beat in the egg and vanilla extract, then blend in the pumpkin puree until smooth.
- Gradually add the flour, mixing until just combined.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 18-20 minutes or until the edges are lightly golden.
- While the cookies cool, prepare the cream cheese frosting by beating together the softened butter, cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
- Once cookies are completely cool, frost them generously with the cream cheese frosting.
Notes
Make sure to blot the pumpkin puree to avoid overly moist cookies. These cookies can be stored in an airtight container for up to a week.
