  • 1/2 cup unsalted butter softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy.
  3. Add the egg and vanilla extract to the mixture, and beat until well combined.

Notes

Make sure to squeeze excess moisture from the grated zucchini for best results. You can also add chocolate chips for an extra treat!
