- 2 ½ cups (300 g) all-purpose flour
- 8 tablespoons (113 g) unsalted butter
- ½ cup (125 g) sourdough starter discard
- 1 cup (240 g) buttermilk
- ¼ cup (50 g) sugar
- 1 cup (148 g) blueberries
- 1 teaspoon (5 g) fine sea salt
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup (120 g) powdered sugar
- 2 tablespoons (30 g) heavy cream
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the flour, salt, baking powder, and baking soda until well combined.
- Cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
- Stir in the sourdough starter discard and buttermilk until just combined. Fold in the blueberries gently.
- Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick. Cut out biscuits using a biscuit cutter.
- Place the biscuits on the prepared baking sheet and bake for 20-25 minutes or until golden brown.
- For the glaze, whisk together powdered sugar and heavy cream until smooth, adding more cream if necessary to reach desired consistency.
- Drizzle the glaze over the warm biscuits and serve.
Notes
Use fresh blueberries for the best flavor. You can adjust the sugar in the biscuit dough based on your sweetness preference.
