- 1 cup / 240g active sourdough starter 100% hydration
- fed and bubbly
- 3 3/4 cups / 470g all-purpose flour
- 1/3 cup / 65g granulated sugar
- 1 tsp salt
- 3/4 cup / 180ml whole milk lukewarm
- 1 large egg
- 1 tbsp instant yeast
- 10 tbsp / 140g unsalted butter softened (for the dough)
- 8 tbsp / 115g unsalted butter cold (for laminating)
- 1 1/4 cups / 225g semisweet chocolate chips
Instructions
- In a large bowl, mix the active sourdough starter, lukewarm milk, and egg until combined.
- In another bowl, combine flour, sugar, salt, and instant yeast; add to the wet mixture and mix until a dough forms.
- Knead in 10 tbsp of softened butter until the dough is smooth, then cover and let it rise for about 1 hour or until doubled in size.
- Roll out the dough into a rectangle on a floured surface, place the cold butter in the center, and fold the dough over to encase the butter.
- Roll out again and fold into thirds; repeat this process twice more to create layers.
- After the final fold, roll out into a rectangle and sprinkle chocolate chips over the surface, then roll it up tightly into a log.
- Cut into slices and place in a greased baking dish, then cover and let rise for 30 minutes.
- Preheat oven to 375°F (190°C) and bake for 25-30 minutes or until golden brown.

Notes
Make sure your sourdough starter is active for the best rise. You can replace semisweet chocolate chips with dark chocolate for a richer flavor.
