- 150 g active sourdough starter fed and bubbly
- 250 g buttermilk room temperature
- 50 g sugar
- 1 egg
- 450 g all-purpose flour
- 5 g salt
- 60 g butter softened
- 50 g butter softened
- 60 g brown sugar
- 1½ tsp ground cinnamon
- ½ cup powdered sugar
- 1 –2 tbsp lemon juice
Instructions
- In a large bowl, mix the active sourdough starter, buttermilk, sugar, and egg until well combined.
- Gradually add the all-purpose flour and salt, mixing until a dough forms.
- Knead in the softened butter until the dough is smooth and elastic.
- Cover the dough and let it rise in a warm place until doubled in size, about 1-2 hours.
- Preheat the oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
- Roll the dough into a rectangle and spread the softened butter for the filling across the surface.
- Sprinkle the brown sugar and cinnamon evenly over the butter.
- Slice the dough into strips, twist each strip, and form it into knots. Place them on the prepared baking sheet.
- Bake for 25-30 minutes, or until golden brown.
- For the optional glaze, whisk together powdered sugar and lemon juice, then drizzle over warm knots before serving.
Notes
Store any leftovers in an airtight container for a few days. These knots taste best fresh but can be reheated in the oven.
