Ingredients

  • 150 g active sourdough starter fed and bubbly
  • 250 g buttermilk room temperature
  • 50 g sugar
  • 1 egg
  • 450 g all-purpose flour
  • 5 g salt
  • 60 g butter softened
  • 50 g butter softened
  • 60 g brown sugar
  • 1½ tsp ground cinnamon
  • ½ cup powdered sugar
  • 12 tbsp lemon juice

Instructions

  1. In a large bowl, mix the active sourdough starter, buttermilk, sugar, and egg until well combined.
  2. Gradually add the all-purpose flour and salt, mixing until a dough forms.
  3. Knead in the softened butter until the dough is smooth and elastic.
  4. Cover the dough and let it rise in a warm place until doubled in size, about 1-2 hours.
  5. Preheat the oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  6. Roll the dough into a rectangle and spread the softened butter for the filling across the surface.
  7. Sprinkle the brown sugar and cinnamon evenly over the butter.
  8. Slice the dough into strips, twist each strip, and form it into knots. Place them on the prepared baking sheet.
  9. Bake for 25-30 minutes, or until golden brown.
  10. For the optional glaze, whisk together powdered sugar and lemon juice, then drizzle over warm knots before serving.

Notes

Store any leftovers in an airtight container for a few days. These knots taste best fresh but can be reheated in the oven.
