- 8 tablespoons (113 g) butter (cold)
- 2 ½ cups (300 g) all-purpose flour
- ⅓ cup (100 g) sourdough starter discard
- 1 cup (240 g) buttermilk
- 1 tablespoon + 1 teaspoon (25 g) honey (or granulated sugar)
- ¾ teaspoon (4 g) fine sea salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¾ cup (150 g) light brown sugar
- 2 teaspoons ground cinnamon
- 4 tablespoons (56 g) butter (melted)
- 1 tablespoon (14 g) butter (melted)
- 1 cup (120 g) powdered sugar
- 1 teaspoon (5 g) vanilla extract
- 2 tablespoons (30 g) milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, cut the cold butter into the flour until crumbly.
- In another bowl, mix the sourdough starter, buttermilk, honey, salt, baking powder, and baking soda.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- Roll out the dough on a floured surface into a rectangle.
- Brush melted butter over the dough, then sprinkle the cinnamon-sugar filling evenly on top.
- Carefully roll up the dough and cut it into slices.
- Place the slices into the prepared baking dish and bake for 25-30 minutes until golden brown.
- For the glaze, mix melted butter, powdered sugar, vanilla extract, and milk in a bowl until smooth.
- Drizzle the glaze over the warm rolls and serve.
Notes
Ensure your buttermilk is at room temperature for best results. You can also add nuts or raisins to the filling if desired.
