Description

These Sourdough Cinnamon Sugar Pretzel Bites are the perfect blend of tangy sourdough and sweet cinnamon sugar, making them an irresistible treat.


Ingredients

  • 1 cup warm water no hotter than 90°F
  • ½ cup sourdough starter discard/unfed
  • 3 tablespoons brown sugar
  • 2 ¼ teaspoons dry active yeast
  • 2 teaspoons salt
  • 3 ½4 cups all-purpose flour
  • 4 tablespoons salted butter melted
  • 6 cups water
  • 2 tablespoons baking soda
  • 1 tablespoon dark brown sugar
  • 1 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 68 tablespoons salted butter melted

Instructions

  1. In a large bowl, combine warm water, sourdough starter, brown sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. Add salt and gradually mix in the flour until a dough forms; knead for about 5-7 minutes until smooth.
  3. Place the dough in a greased bowl, cover it, and let it rise in a warm place for 1-2 hours until doubled in size.
  4. Preheat your oven to 425°F. In a large pot, bring 6 cups of water to a boil and add baking soda and dark brown sugar.
  5. Roll the dough into small balls, about 1 inch in diameter.
  6. Boil the pretzel bites in batches for about 30 seconds each before transferring them to a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 12-15 minutes or until golden brown.
  8. While the pretzel bites are baking, mix granulated sugar and ground cinnamon in a bowl.
  9. Once baked, brush them with melted salted butter and toss them in the cinnamon sugar mixture.
  10. Allow them to cool slightly before serving.
