Description
Delicious and fluffy sourdough discard dinner rolls made easy with leftover sourdough starter.
Ingredients

- 2 tablespoons warm water
- ½ teaspoon granulated sugar
- ½ teaspoon traditional or active yeast
- ¾ cup whole milk
- ½ cup sourdough discard
- 1 large egg
- 2 tablespoons granulated sugar
- 2 tablespoons salted butter
- 2 ⅔ cups all-purpose flour
- 1 teaspoon fine salt
Instructions
- In a small bowl, combine warm water, sugar, and yeast. Let it sit until frothy, about 5-10 minutes.
- In a large mixing bowl, whisk together the warm milk, sourdough discard, egg, and the 2 tablespoons of sugar.
- Add the yeast mixture and softened butter to the wet ingredients and mix until combined.
- Gradually add the all-purpose flour and salt, mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm area until doubled in size, about 1 hour.
- Preheat the oven to 375°F (190°C). Punch down the risen dough and divide it into 12 equal pieces, shaping them into rolls.
- Place the rolls in a greased baking dish, cover, and let them rise for another 30 minutes.
- Bake for 25-30 minutes, until golden brown. Remove and let cool before serving.
Notes
For a richer flavor, let the rolls rise overnight in the fridge. Allow them to come to room temperature before baking.
