Description

Delicious and fluffy sourdough discard dinner rolls made easy with leftover sourdough starter.


Ingredients

  • 2 tablespoons warm water
  • ½ teaspoon granulated sugar
  • ½ teaspoon traditional or active yeast
  • ¾ cup whole milk
  • ½ cup sourdough discard
  • 1 large egg
  • 2 tablespoons granulated sugar
  • 2 tablespoons salted butter
  • 2 ⅔ cups all-purpose flour
  • 1 teaspoon fine salt

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit until frothy, about 5-10 minutes.
  2. In a large mixing bowl, whisk together the warm milk, sourdough discard, egg, and the 2 tablespoons of sugar.
  3. Add the yeast mixture and softened butter to the wet ingredients and mix until combined.
  4. Gradually add the all-purpose flour and salt, mixing until a soft dough forms.
  5. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm area until doubled in size, about 1 hour.
  7. Preheat the oven to 375°F (190°C). Punch down the risen dough and divide it into 12 equal pieces, shaping them into rolls.
  8. Place the rolls in a greased baking dish, cover, and let them rise for another 30 minutes.
  9. Bake for 25-30 minutes, until golden brown. Remove and let cool before serving.

Notes

For a richer flavor, let the rolls rise overnight in the fridge. Allow them to come to room temperature before baking.
