- 5 g Vanilla Extract
- 100 g Butter
- Melted
- 120 g Confectioner’s Sugar

- 45 g Milk

Instructions
- In a bowl, mix warm milk, sugar, and yeast until combined. Let it sit for 5-10 minutes until bubbly.
- Add the sourdough discard, flour, salt, and room temperature butter to the yeast mixture. Mix until a dough forms.
- Knead the dough for about 8-10 minutes until smooth and elastic. Place it in a greased bowl, cover, and let it rise until doubled in size, about 1-2 hours.
- Preheat the oven to 350°F (175°C) and grease a bundt pan.
- Once the dough has risen, punch it down and divide it into small pieces.
- Roll each piece into a ball, then coat in melted butter, followed by a mixture of sugar and cinnamon.
- Place the coated dough balls in the prepared bundt pan and top with any remaining butter and sugar mix.
- Bake for 30-35 minutes or until golden brown. While baking, prepare the brown sugar sauce by melting butter with brown sugar and vanilla extract in a saucepan.
- Drizzle the brown sugar sauce over the baked monkey bread while still warm.
- Let it cool slightly, then drizzle with a simple icing made from confectioner’s sugar, milk, and vanilla.
Notes
For the best results, allow the dough to rise in a warm area. This recipe utilizes unfed sourdough discard, which is perfect for adding flavor without wasting your starter.
