Description

Sourdough Fig and Orange Bread is a delightful combination of sweet figs and citrusy orange, elevated by the tangy flavor of sourdough. Perfect for breakfast or dessert!


Ingredients

  • 1 cup (120g) King Arthur Unbleached All-Purpose Flour
  • 1 1/2 cups (170g) King Arthur Golden Wheat Flour
  • 3/4 cup (149g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon table salt
  • 3/4 cup (170g) sourdough starter
  • unfed/discard
  • 1/2 cup (99g) vegetable oil
  • 1 cup (227g) orange juice
  • zest of 1 orange
  • 1 large egg
  • 1 cup (149g) diced dried figs
  • 3/4 cup (89g) chopped almonds
  • shelled pistachios
  • or pine nuts
  • coarse sparkling sugar
  • for topping; optional

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the all-purpose flour, golden wheat flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the sourdough starter, vegetable oil, orange juice, orange zest, and egg, mixing until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the diced figs and nuts of your choice.
  6. Transfer the batter into the prepared loaf pan, then sprinkle the top with coarse sparkling sugar if desired.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

This bread freezes well, so make a double batch and save one for later. You can replace the figs with other dried fruits if desired.
