These Sourdough Focaccia Sticky Buns are a delightful fusion of fluffy focaccia and sweet sticky buns, topped with a caramelized pecan mixture that will leave you craving more.

- 225 grams pecans

Instructions
- Prepare the levain by mixing the sourdough starter, flour, and water. Allow it to rise for 10-12 hours at 78-80ºF.
- In a large bowl, combine the ripe levain, water, brown sugar, salt, and bread flour. Mix until a soft dough forms, then knead for about 10 minutes.
- Let the dough rise in a greased bowl, covered, for 1-2 hours or until doubled in size.
- In a saucepan, melt the unsalted butter over medium heat for the pecan topping. Stir in brown sugar, maple syrup, heavy cream, salt, and vanilla extract until combined. Remove from heat and mix in the chopped pecans.
- Spread the pecan mixture evenly in the bottom of a baking dish.
- Punch down the risen dough and roll it out on a floured surface. Brush with melted butter and sprinkle with cinnamon sugar oil made from olive oil, melted butter, brown sugar, and cinnamon.
- Roll the dough tightly and cut into slices. Arrange them on top of the pecan mixture in the baking dish.
- Cover and let rise for another hour. Preheat the oven to 350ºF.
- Bake the sticky buns for 30 minutes or until golden brown and cooked through.
- Allow to cool slightly, then invert onto a serving platter. Serve warm and enjoy!
Notes
Make sure your levain is bubbly and active for the best results. You can adjust the topping ingredients to your taste preference.
