Description

Fried Cornbread Southern Cornmeal Hoecakes are crispy on the outside and tender inside, made with cornmeal, buttermilk, eggs, and simple seasonings. They are perfect as a Southern side dish, breakfast, or snack.

  • 2 large eggs, beaten
  • ¼ cup unsalted butter, melted
  • 1 cup fresh corn kernels, optional
  • ½ cup chopped green onions, optional
  • ½ cup shredded cheese, optional
  • Vegetable oil, for frying
  • Fresh herbs, honey, maple syrup, or chili jam, for serving

Instructions

  1. Combine the cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk together the buttermilk and eggs.
  3. Add the wet ingredients to the dry ingredients and stir just until combined. Avoid overmixing.
  4. Stir in the melted butter and any optional corn, green onions, or cheese.
  5. Let the batter rest for 10–15 minutes.
  6. Heat about ¼ inch of vegetable oil in a large skillet over medium heat, aiming for approximately 350°F (175°C).
  7. Drop portions of batter into the hot oil, leaving about 2 inches between each hoecake.
  8. Fry for about 3 minutes per side, or until golden brown and crispy.
  9. Remove with a slotted spoon and place on paper towels to drain excess oil.
  10. Serve hot with butter, honey, maple syrup, or your favorite accompaniment.

Notes

  • Use a cast-iron skillet for even cooking and a crisp golden crust.
  • Do not overmix the batter; a few lumps are fine.
  • Letting the batter rest helps create a more tender texture.
  • Add jalapeños, bell peppers, herbs, or cheese for different flavor variations.
