  • 2 teaspoons cornstarch or arrowroot
  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 12 tablespoons butter chilled and grated
  • 1/2 cup boiling water
  • 1/3 cup white sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches, lemon juice, white sugar, brown sugar, cinnamon, nutmeg, and cornstarch. Mix well and set aside to let the juices meld.
  3. In another bowl, whisk together flour, white sugar, brown sugar, baking powder, and kosher salt.
  4. Add grated butter to the dry ingredients and mix until crumbly.
  5. Stir in boiling water until just combined, creating a batter.
  6. Pour the peach mixture into a greased baking dish and spoon the batter over the top.
  7. In a small bowl, mix together the cinnamon sugar topping ingredients and sprinkle over the batter.
  8. Bake for 30-35 minutes or until the crust is golden brown and the peaches are bubbling.
  9. Allow to cool slightly before serving.
