Description

Indulge in the warm, comforting flavors of Southern Peach Cobbler, made with sweet peaches and a delectable homemade topping.


Ingredients

  • 2 bags Frozen peaches
  • 20 ounces each
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Almond extract
  • 1/2 tablespoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 2 teaspoons Corn starch
  • 1 teaspoon Cream of tartar
  • 1/2 stick Butter
  • unsalted
  • room temperature
  • 2 tablespoons Water
  • 1 teaspoon Fresh lemon juice
  • 2 cups All purpose Flour
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 2 teaspoons Baking powder
  • 1 tablespoon Cinnamon
  • reserve 1/2 for garnishment
  • 1 stick Butter
  • unsalted cold
  • 1/4 cup Boiling hot water
  • 1/2 teaspoon Salt
  • 3 tablespoons Granulated sugar
  • to dust top of cobbler

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the frozen peaches, granulated sugar, brown sugar, vanilla extract, almond extract, cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice. Mix well and let sit for 15 minutes.
  3. In another bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the boiling water until just combined, then spread the peach mixture in a greased baking dish and drop spoonfuls of the topping over it.
  6. Sprinkle the reserved cinnamon and sugar mixture on top.
  7. Bake in the preheated oven for 30 minutes, or until the topping is golden brown and the filling is bubbly.

Notes

For best results, let the cobbler sit for a few minutes after baking to thicken the filling further. Serve warm with a scoop of vanilla ice cream for extra indulgence.
