Description
Delight in these Southern Peach Fritters, perfectly fluffy dough filled with ripe peaches and topped with a sweet glaze for a decadent treat.

- 1 ½ teaspoons active dried yeast
- ¼ cup + 1 cup whole milk warmed to touch
- 1 teaspoon + 1/3 cup granulated cane sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 5 1/3 cups bread flour or all purpose flour
- ½ cup softened unsalted butter
- 5 to 6 ripe peaches pitted and finely chopped
- 1/3 cup brown sugar
- 1 tablespoon fresh lemon juice
- 3 cups powdered sugar
- ½ cup whole milk
- 2 tablespoons brown sugar or maple syrup
- 2 teaspoons vanilla bean paste
Instructions
- In a small bowl, combine the active dried yeast with ¼ cup of warmed milk and 1 teaspoon of sugar. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, beat the eggs, remaining sugar, warm milk, and vanilla extract until combined.
- Add the yeast mixture and flour to the egg mixture, mixing until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth, then incorporate the softened butter.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
- While the dough rises, combine the chopped peaches, brown sugar, and lemon juice in a bowl and set aside.
- Once the dough has risen, punch it down and roll it out to about ½ inch thick. Cut into circles or squares.
- Place a spoonful of peach filling in the center of each piece of dough, fold, and seal the edges.
- Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the fritters in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
- To make the glaze, whisk together powdered sugar, whole milk, brown sugar or maple syrup, and vanilla bean paste until smooth. Drizzle over warm fritters before serving.
