Description

Ingredients

  • 1 ½ teaspoons active dried yeast
  • ¼ cup + 1 cup whole milk warmed to touch
  • 1 teaspoon + 1/3 cup granulated cane sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 5 1/3 cups bread flour or all purpose flour
  • ½ cup softened unsalted butter
  • 5 to 6 ripe peaches pitted and finely chopped
  • 1/3 cup brown sugar
  • 1 tablespoon fresh lemon juice
  • 3 cups powdered sugar
  • ½ cup whole milk
  • 2 tablespoons brown sugar or maple syrup
  • 2 teaspoons vanilla bean paste

Instructions

  1. In a small bowl, combine the active dried yeast with ¼ cup of warmed milk and 1 teaspoon of sugar. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, beat the eggs, remaining sugar, warm milk, and vanilla extract until combined.
  3. Add the yeast mixture and flour to the egg mixture, mixing until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth, then incorporate the softened butter.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
  6. While the dough rises, combine the chopped peaches, brown sugar, and lemon juice in a bowl and set aside.
  7. Once the dough has risen, punch it down and roll it out to about ½ inch thick. Cut into circles or squares.
  8. Place a spoonful of peach filling in the center of each piece of dough, fold, and seal the edges.
  9. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the fritters in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
  10. To make the glaze, whisk together powdered sugar, whole milk, brown sugar or maple syrup, and vanilla bean paste until smooth. Drizzle over warm fritters before serving.
