Description

This Southern Squash Casserole is a creamy and cheesy dish that makes the perfect side for any meal, packed with flavor and comfort.


Ingredients

  • 2 pounds yellow squash sliced ¼ inch thick (about 5 medium sized squash)
  • ¼ cup butter
  • ½ cup diced onion
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup sour cream
  • 1 large egg beaten
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 cup butter crackers finely crushed (about 25 crackers)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the sliced squash, garlic powder, salt, and black pepper to the skillet. Cook until the squash is tender, about 10 minutes, stirring occasionally.
  4. Remove from heat and let cool slightly. In a large bowl, combine the cooled squash mixture with sour cream, beaten egg, cheddar cheese, and Parmesan cheese.
  5. Transfer the mixture to a greased baking dish and top with the crushed butter crackers.
  6. Bake in the preheated oven for 30 minutes, or until the topping is golden brown.
  7. Remove from the oven and let sit for a few minutes before serving.

Notes

For added flavor, you can mix in some cooked bacon or add fresh herbs such as parsley or thyme.
