This Southern Squash Casserole is a creamy and cheesy dish that makes the perfect side for any meal, packed with flavor and comfort.

- 2 pounds yellow squash sliced ¼ inch thick (about 5 medium sized squash)
- ¼ cup butter
- ½ cup diced onion
- ½ teaspoon garlic powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ cup sour cream
- 1 large egg beaten
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 cup butter crackers finely crushed (about 25 crackers)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the sliced squash, garlic powder, salt, and black pepper to the skillet. Cook until the squash is tender, about 10 minutes, stirring occasionally.
- Remove from heat and let cool slightly. In a large bowl, combine the cooled squash mixture with sour cream, beaten egg, cheddar cheese, and Parmesan cheese.
- Transfer the mixture to a greased baking dish and top with the crushed butter crackers.
- Bake in the preheated oven for 30 minutes, or until the topping is golden brown.
- Remove from the oven and let sit for a few minutes before serving.
Notes
For added flavor, you can mix in some cooked bacon or add fresh herbs such as parsley or thyme.
