Description

  • 1 (9-inch) frozen deep-dish pie crust
  • thawed for 10 minutes or homemade all-butter pie crust
  • 3 medium ripe beefsteak tomatoes (about 2 ½ lbs total)
  • sliced ¼-inch thick
  • seeds and pulp scooped out
  • 1 tsp kosher salt
  • plus extra for salting tomatoes
  • ½ tsp freshly ground black pepper
  • 15 saltine crackers
  • crushed into coarse crumbs (about ⅔ cup)
  • 2 cups shredded sharp cheddar cheese
  • divided
  • ½ cup full-fat mayonnaise
  • ¼ cup diced yellow onion
  • 2 tbsp fresh chopped basil
  • plus extra whole leaves for garnish
  • 1 tbsp fresh chopped oregano
  • ¼ tsp garlic powder
  • ¼ tsp smoked paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a colander, layer the sliced tomatoes and sprinkle them with kosher salt. Let them drain for about 10 minutes.
  3. In a large mixing bowl, combine the crushed saltine crackers, 1 cup of shredded cheddar cheese, mayonnaise, diced onion, basil, oregano, garlic powder, smoked paprika, black pepper, and gently mix.
  4. Once the tomatoes are drained, layer half of them in the bottom of the pie crust. Spread half of the cheese mixture over the tomatoes. Repeat with the remaining tomatoes and cheese mixture.
  5. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
  6. Bake for 30 minutes, or until the cheese is bubbly and golden brown.
  7. Let it cool for 5-10 minutes before slicing. Garnish with fresh basil leaves before serving.

Notes

For a deeper flavor, consider using heirloom tomatoes. This pie can be served warm or at room temperature.
