- 1 lb. ground beef
- 1 lb. spaghetti noodles
- 1 (24 oz.) jar marinara sauce
- 1 small onion
- diced
- 1 tablespoon minced garlic
- 1 egg
- 2 teaspoons Italian seasoning
- divided
- 2 tablespoons olive oil
- divided
- salt for pasta water
- Olives for eyes
- Parmesan or mozzarella cheese
- optional
Instructions
- In a mixing bowl, combine ground beef, diced onion, minced garlic, egg, 1 teaspoon Italian seasoning, and a pinch of salt. Mix well and shape into meatballs, placing an olive on top of each for eyes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Cook the meatballs until browned on all sides, about 10-15 minutes, then set aside.
- In the same skillet, add marinara sauce and remaining Italian seasoning. Bring to a simmer and add the meatballs back into the sauce. Cover and let them cook for 10 minutes.
- While the meatballs are simmering, cook spaghetti noodles according to package instructions in salted water. Drain and set aside.
- Serve spaghetti topped with meatballs and sauce. Sprinkle with Parmesan or mozzarella cheese if desired.
Notes
Feel free to customize the seasonings or add additional vegetables to the sauce for more flavor. To make it extra spooky, use different shapes for the meatballs.
