  • Pinch of nutmeg, cardamom, and allspice

Wet Ingredients:

  • 1/2 cup butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract (optional)

Mix-ins:

  • 1/2 cup mini chocolate chips

Spiced Sugar Coating:

  • 1/4 cup granulated sugar
  • 1/4 tsp cinnamon
  • Pinch of nutmeg, cardamom, and allspice

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, espresso powder, and spices.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg, vanilla extract, and almond extract. Mix until combined.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in chocolate chips.
  7. In a small bowl, mix the spiced sugar coating ingredients.
  8. Scoop dough into balls and roll in spiced sugar.
  9. Place on baking sheet, spacing evenly.
  10. Bake for 10–12 minutes until edges are set and tops are crinkled.
  11. Cool on baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Chill the dough for 1–2 hours for more pronounced crinkles.
  • Do not overbake—centers should remain soft for a fudgy texture.
  • Add a dusting of powdered sugar after baking for a classic crinkle look.
