Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1/2 cup butter – melted
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 tablespoon lemon juice
  • 1 tablespoon vegetable oil
  • 1 cup rainbow sprinkles + additional on top

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, melted butter, eggs, vanilla, lemon juice, and vegetable oil. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the rainbow sprinkles, reserving a few for topping.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle additional rainbow sprinkles on top.
  7. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra moist muffins, do not overmix the batter. You can also add a lemon glaze on top for added sweetness.
