- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup milk
- 1/2 cup butter – melted
- 2 eggs
- 2 teaspoons vanilla
- 1 tablespoon lemon juice
- 1 tablespoon vegetable oil
- 1 cup rainbow sprinkles + additional on top
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, melted butter, eggs, vanilla, lemon juice, and vegetable oil. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the rainbow sprinkles, reserving a few for topping.
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle additional rainbow sprinkles on top.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra moist muffins, do not overmix the batter. You can also add a lemon glaze on top for added sweetness.
