  • ½ cucumber, sliced

  • 2 tablespoons mayonnaise
  • Salt & pepper to taste

Optional:

  • Corn kernels (for added sweetness)

Instructions

  • Preheat oven to 200°C (400°F).
  • Prepare the chicken:
    • Toss drumsticks with olive oil, paprika, salt, and pepper.
    • Place on a lined baking tray.
    • Brush generously with BBQ sauce.
  • Bake the chicken:
    • Bake for 25–30 minutes, turning halfway and brushing with more sauce until sticky and caramelized.
  • Prepare the wedges:
    • Toss potato wedges with olive oil, salt, and pepper.
    • Spread on a baking tray in a single layer.
    • Bake for 30–35 minutes, flipping halfway until crispy and golden.
  • Make the slaw:
    • In a bowl, combine cabbage, carrot, and cucumber.
    • In a small bowl, mix mayonnaise, vinegar, salt, and pepper.
    • Pour over veggies and toss well. Chill before serving.
  • Serve:
    • Plate the sticky BBQ drumsticks with crispy wedges and fresh slaw on the side.
