- 6 chicken drumsticks

For the Potato Wedges:
- 3 large potatoes, cut into wedges

- Salt & black pepper to taste
For the Fresh Slaw:
- 2 cups shredded cabbage
- ½ carrot, shredded
- ½ cucumber, sliced
- 1 tablespoon vinegar
- 2 tablespoons mayonnaise
- Salt & pepper to taste
Optional:
- Corn kernels (for added sweetness)
Instructions
- Preheat oven to 200°C (400°F).
- Prepare the chicken:
- Toss drumsticks with olive oil, paprika, salt, and pepper.
- Place on a lined baking tray.
- Brush generously with BBQ sauce.
- Bake the chicken:
- Bake for 25–30 minutes, turning halfway and brushing with more sauce until sticky and caramelized.
- Prepare the wedges:
- Toss potato wedges with olive oil, salt, and pepper.
- Spread on a baking tray in a single layer.
- Bake for 30–35 minutes, flipping halfway until crispy and golden.
- Make the slaw:
- In a bowl, combine cabbage, carrot, and cucumber.
- In a small bowl, mix mayonnaise, vinegar, salt, and pepper.
- Pour over veggies and toss well. Chill before serving.
- Serve:
- Plate the sticky BBQ drumsticks with crispy wedges and fresh slaw on the side.
