- 1 cup diced strawberries
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 1/2 cup unsalted butter melted
- 3/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Stir in the melted butter, followed by the brown sugar, egg, and vanilla extract.
- In a separate bowl, mix the flour, baking soda, salt, and cinnamon together.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Gently fold in the diced strawberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Ensure bananas are very ripe for the best flavor. You can substitute blueberries for strawberries if desired.
