- ½ cup powdered sugar-free sweetener
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries
- pureed
- 1 tablespoon lemon juice
- 1 cup fresh strawberries
- sliced
- 1 tablespoon sugar-free strawberry preserves (optional)
Instructions
- In a medium bowl, combine almond flour, melted butter, powdered sweetener, and cinnamon. Mix until well combined and press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add heavy cream, powdered sweetener, and vanilla extract, mixing until combined and fluffy.
- Fold in the pureed strawberries and lemon juice until fully incorporated.
- Pour the cheesecake filling over the crust and spread evenly. Refrigerate for at least 4 hours or until firm.
- Once set, remove from the springform pan and top with sliced strawberries and optional sugar-free strawberry preserves before serving.
Notes
Ensure the cream cheese is softened to room temperature for easier mixing. Chill the cheesecake for several hours to achieve the best texture.
