- 3/4 cup graham cracker crumbs
- 3 tbsp melted butter
- 1 cup cottage cheese
- 1/3 cup unsweetened plain Greek yogurt
- 2 tbsp cream cheese
- 2 tbsp sugar free maple syrup
- 1 egg
- 1/4 tsp baking powder
- 1 scoop PEScience Strawberry Cheesecake Protein Powder
- 3/4 cup frozen strawberries
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of each muffin tin liner to form the crust.
- In another bowl, blend the cottage cheese, Greek yogurt, cream cheese, sugar free maple syrup, egg, baking powder, and protein powder until smooth.
- Pour the cheesecake filling over the crust in the muffin tins, filling each liner about 3/4 full.
- Bake in the preheated oven for 30 minutes or until the centers are set. Allow to cool completely.
- While cooling, blend the frozen strawberries until smooth to create the topping. Serve the cheesecake bites topped with the strawberry puree.
Notes
These cheesecake bites are best served chilled. You can store leftovers in the refrigerator for up to 3 days.
