  • ¾ teaspoon vanilla extract

  • 1 quart fresh strawberries
  • hulled and halved
  • ¾ cup white sugar
  • 3 tablespoons cornstarch
  • ½ cup water

Instructions

  1. In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Spread the cream cheese mixture evenly over the baked pie crust.
  3. In a saucepan, combine the white sugar, cornstarch, and water; cook over medium heat until it thickens and comes to a boil.
  4. Remove from heat and let cool slightly before adding the fresh strawberries.
  5. Pour the strawberry mixture over the cream cheese layer in the pie crust.
  6. Refrigerate for at least 4 hours or until set before serving.
