Instructions
- In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Spread the cream cheese mixture evenly over the baked pie crust.
- In a saucepan, combine the white sugar, cornstarch, and water; cook over medium heat until it thickens and comes to a boil.
- Remove from heat and let cool slightly before adding the fresh strawberries.
- Pour the strawberry mixture over the cream cheese layer in the pie crust.
- Refrigerate for at least 4 hours or until set before serving.
