- 1 egg
- 1 cup milk

- 1 tbsp melted butter
- 1 cup cream cheese

- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries
- finely chopped
- 2 tbsp sugar
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the egg, then add the milk, vanilla extract, and melted butter.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- In a separate bowl, beat cream cheese with powdered sugar and vanilla extract until smooth.
- In a small bowl, mix chopped strawberries with sugar and let sit for a few minutes.
- Heat a non-stick skillet over medium heat and pour batter in a circle to form pancakes.
- Once bubbles form, add a spoonful of cream cheese filling and a few strawberry pieces to the center of each pancake.
- Fold the pancake over the filling and cook until golden brown on both sides.
- Repeat with remaining batter and filling. Serve warm with additional strawberries on top.
Notes
For extra sweetness, drizzle with maple syrup or top with whipped cream.
