- 1 cup unsalted butter at room temperature
- 3/4 cup sugar
- 1 large egg
- 1/4 cup fresh squeezed lemon juice
- 2 1/4 cups all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup diced fresh strawberries
- 1 cup powdered sugar sifted
- 1 Tbsp strawberry puree
- lemon juice to thin the glaze
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add in the egg and fresh squeezed lemon juice, and mix well.
- In another bowl, whisk together the flour, baking powder, and salt, then gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Fold in the diced fresh strawberries gently.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
- While the blondies are baking, prepare the glaze by mixing the sifted powdered sugar, strawberry puree, and enough lemon juice to achieve a spreadable consistency.
- Once the blondies are cooled, spread the glaze over the top, slice, and serve.
Notes
For a more intense strawberry flavor, use ripe strawberries and ensure they’re diced evenly to distribute throughout the blondies.
