1 Tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add in the egg and lemon juice, mixing until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the diced strawberries gently.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- While the blondies are baking, prepare the glaze by mixing the powdered sugar, strawberry puree, and lemon juice until smooth and spreadable.
- Once the blondies have cooled, spread the glaze over the top before slicing into squares.
Notes
For the best flavor and texture, use ripe strawberries. You can also substitute with other berries if desired.
