  • 34 cups powdered sugar
  • 1 tablespoon whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, beat the softened butter and sugar until light and fluffy. Add the lemon zest and mix well.
  4. Incorporate the eggs, vanilla extract, milk, sour cream, and lemon juice into the butter mixture until combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Divide the batter among the prepared cupcake liners and bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. While the cupcakes cool, prepare the strawberry frosting by pureeing the strawberries in a blender.
  8. In a mixing bowl, beat the softened butter, then gradually add powdered sugar until desired sweetness and consistency are obtained. Mix in the pureed strawberries and whipping cream if needed for texture.
  9. Once the cupcakes are completely cool, frost them generously with the strawberry frosting.
