Description

Delicious and healthy Strawberry Protein Crepes that are easy to make and perfect for breakfast or dessert.


Ingredients

  • ¼ cup vegan protein powder
  • 1 cup sparkling water OR regular water divided
  • 1 ¼ cups all purpose flour
  • 1 tablespoon cornstarch
  • 1 tablespoon granulated sugar
  • 1 cup almond milk
  • 2 tablespoons coconut oil melted
  • plus more for frying
  • Strawberries for serving
  • Vanilla coconut yogurt for serving

Instructions

  1. In a large mixing bowl, whisk together the vegan protein powder, all-purpose flour, cornstarch, and granulated sugar.
  2. Gradually add the almond milk and ½ cup of sparkling water, stirring until smooth.
  3. Melt the coconut oil and mix it into the batter, combining well.
  4. Heat a non-stick skillet over medium heat and lightly grease it with additional coconut oil.
  5. Pour ¼ cup of the batter into the skillet, swirling to cover the bottom evenly.
  6. Cook for about 2-3 minutes until the edges start to lift, then carefully flip and cook for another 1-2 minutes.
  7. Repeat with the remaining batter, adding more oil as needed.
  8. Serve warm with sliced strawberries and a dollop of vanilla coconut yogurt.
