Ingredients

- ¼ cup vegan protein powder
- 1 cup sparkling water OR regular water divided
- 1 ¼ cups all purpose flour
- 1 tablespoon cornstarch
- 1 tablespoon granulated sugar
- 1 cup almond milk
- 2 tablespoons coconut oil melted
- plus more for frying
- Strawberries for serving
- Vanilla coconut yogurt for serving
Instructions
- In a large mixing bowl, whisk together the vegan protein powder, all-purpose flour, cornstarch, and granulated sugar.
- Gradually add the almond milk and ½ cup of sparkling water, stirring until smooth.
- Melt the coconut oil and mix it into the batter, combining well.
- Heat a non-stick skillet over medium heat and lightly grease it with additional coconut oil.
- Pour ¼ cup of the batter into the skillet, swirling to cover the bottom evenly.
- Cook for about 2-3 minutes until the edges start to lift, then carefully flip and cook for another 1-2 minutes.
- Repeat with the remaining batter, adding more oil as needed.
- Serve warm with sliced strawberries and a dollop of vanilla coconut yogurt.
