Ingredients

  • 1 cup strawberry frosting
  • 1/2 cup crushed vanilla wafer cookies or graham crackers
  • 1/4 cup freeze-dried strawberries
  • 16 oz pink candy melts or pink chocolate coating
  • 2 tbsp coconut oil or shortening
  • 46 oz white chocolate or white candy melts
  • crushed freeze-dried strawberries
  • pink sanding sugar or sprinkles
  • optional: edible gold leaf
  • gold stars
  • or pearl dust

Instructions

  1. Prepare the vanilla cake mix according to the package instructions, then allow it to cool completely.
  2. In a large bowl, crumble the cooled cake into fine crumbs.
  3. Add the strawberry frosting, crushed vanilla wafers or graham crackers, and crushed freeze-dried strawberries to the cake crumbs. Mix until well combined.
  4. Form the mixture into small balls, about 1 inch in diameter, and place them on a lined baking sheet. Freeze for about 30 minutes until firm.
  5. In a microwave-safe bowl, combine the pink candy melts and coconut oil. Heat in 30-second intervals, stirring between each, until fully melted and smooth.
  6. Dip each truffle into the melted pink chocolate, allowing excess to drip off, then return them to the baking sheet.
  7. Drizzle with melted white chocolate and sprinkle with crushed freeze-dried strawberries and sanding sugar for decoration.
  8. Optional: add edible gold leaf or sprinkles for an extra fancy touch.
