  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium saucepan, combine the fresh or frozen strawberries, ¼ cup of sugar, and lemon juice. Cook over medium heat until the strawberries soften, about 5 minutes.
  3. In a small bowl, mix the cornstarch with water until smooth and stir it into the berry mixture. Cook until thickened, about 1-2 minutes. Remove from heat and let cool.
  4. In a medium bowl, mix graham cracker crumbs, ⅓ cup sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  5. In a large bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar, mixing well. Add eggs one at a time, mixing after each addition. Stir in vanilla extract, sour cream, and heavy cream until smooth.
  6. Pour half of the cheesecake filling over the crust. Spoon half of the strawberry sauce over the filling and swirl gently with a knife. Pour in the remaining cheesecake filling and top with the remaining strawberry sauce, swirling again.
  7. Bake for 30 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the oven door, letting the cheesecake cool in the oven for 1 hour.
  8. Remove from the oven, refrigerate for at least 4 hours or overnight before serving.
