Description

This Street Corn Pasta Salad combines the flavors of roasted corn, creamy dressing, and fresh herbs for a delicious twist on a classic dish.


Ingredients

  • about 400g of pasta
  • 2 roasted corn cobs
  • 3 green onions
  • 1 shallot
  • 2 jalapeno
  • 1/2 cup cilantro
  • 1 cup cotija cheese
  • 1 cup sour cream
  • 1/2 cup mayo
  • 3 cloves garlic
  • juice and zest of 1 lime
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp salt & pepper

Instructions

  1. Cook the pasta according to package instructions, then drain and let cool.
  2. Remove the kernels from the roasted corn cobs.
  3. In a large bowl, combine the cooled pasta, corn, chopped green onions, diced shallot, sliced jalapenos, and chopped cilantro.
  4. In a separate bowl, mix together the cotija cheese, sour cream, mayo, minced garlic, lime juice, lime zest, smoked paprika, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss until everything is well coated.
  6. Refrigerate for at least 30 minutes before serving to let the flavors meld.

Notes

Feel free to adjust the level of spiciness by adding more or fewer jalapenos based on your preference.
