- 6 to 8 patty pan squash
- 2 tablespoons extra virgin olive oil
- 1/2 sweet onion chopped
- 1 to 2 garlic cloves minced
- 1/2 cup dry quinoa
- 1 cup beef broth low sodium
- 1 cup parmesan cheese freshly shredded
- 1 cup spinach frozen thawed squeezed and drained
- 1 pound grass fed beef ground
- kosher or sea salt to taste
- black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the patty pan squash and scoop out the insides to create boats.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the ground beef, cooking until browned and fully cooked through.
- In a separate pot, combine the dry quinoa and beef broth. Bring to a boil, then reduce to a simmer until quinoa is cooked and liquid is absorbed.
- Once the quinoa is ready, mix it with the cooked beef, sautéed onions, minced garlic, frozen or fresh spinach, and shredded parmesan cheese. Season with salt and black pepper to taste.
- Stuff the mixture into the hollowed-out patty pan squash, pressing down gently.
- Place the stuffed squash in a baking dish and bake in the preheated oven for 25-30 minutes or until the squash is tender and the tops are golden.
- Remove from the oven and let cool slightly before serving.
Notes
Feel free to substitute the ground beef with ground turkey or a meat alternative for a lighter version. You can also customize the filling with your favorite vegetables or herbs.
