- 2 cup grated carrot grated fresh and loosely packed
- ½ cup granulated sweetener
- 4 eggs large

- ¼ cup Greek yoghurt
- 2 cups almond flour
- ¼ cup coconut flour
- ¾ cup walnuts finely chopped
- 3 teaspoon baking powder
- 4 teaspoon cinnamon
- 1 teaspoon ginger
- ½ teaspoon nutmeg
- 1 cup extra thick Greek yoghurt (for Frosting Option 1)
- 1 teaspoon vanilla extract (for Frosting Option 1)
- 2–4 tablespoon powdered sweetener (for Frosting Option 1)
- 1 cup cream cheese (for Frosting Option 2)
- 3 tablespoon butter softened (for Frosting Option 2)
- ¼ cup powdered sweetener (for Frosting Option 2)
- 1 teaspoon vanilla extract (for Frosting Option 2)
- 12 walnut halves
- 1 tablespoon chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, mix the grated carrots and granulated sweetener together until well combined.
- Add in the eggs, melted butter, and Greek yoghurt, and mix until smooth.
- In another bowl, combine the almond flour, coconut flour, baking powder, cinnamon, ginger, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before frosting.
- For the frosting, choose either option and mix the ingredients until smooth, then spread it over the cooled cake.
- Top with walnut halves and chopped walnuts for garnish.
Notes
Adjust the sweetness by using more sweetener if desired. Store any leftover cake in the refrigerator.
