  • ½ cup granulated sweetener
  • 4 eggs large

  • ½ cup butter melted
  • ¼ cup Greek yoghurt
  • 2 cups almond flour
  • ¼ cup coconut flour
  • ¾ cup walnuts finely chopped
  • 3 teaspoon baking powder
  • 4 teaspoon cinnamon
  • 1 teaspoon ginger
  • ½ teaspoon nutmeg
  • 1 cup extra thick Greek yoghurt (for Frosting Option 1)
  • 1 teaspoon vanilla extract (for Frosting Option 1)
  • 24 tablespoon powdered sweetener (for Frosting Option 1)
  • 1 cup cream cheese (for Frosting Option 2)
  • 3 tablespoon butter softened (for Frosting Option 2)
  • ¼ cup powdered sweetener (for Frosting Option 2)
  • 1 teaspoon vanilla extract (for Frosting Option 2)
  • 12 walnut halves
  • 1 tablespoon chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix the grated carrots and granulated sweetener together until well combined.
  3. Add in the eggs, melted butter, and Greek yoghurt, and mix until smooth.
  4. In another bowl, combine the almond flour, coconut flour, baking powder, cinnamon, ginger, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool completely before frosting.
  10. For the frosting, choose either option and mix the ingredients until smooth, then spread it over the cooled cake.
  11. Top with walnut halves and chopped walnuts for garnish.

Notes

Adjust the sweetness by using more sweetener if desired. Store any leftover cake in the refrigerator.
