Description
This Summer Caesar Salad with Charred Sweet Corn combines the crispness of romaine lettuce with the sweetness of charred corn, all brought together with creamy Caesar dressing and topped with shaved parmesan.

- husked and silks removed
- 1 large head romaine lettuce

- 1 large shallot
- thinly sliced
- ½ lemon
- juiced
- ⅓ cup shaved parmesan cheese
- ⅓ cup creamy Caesar dressing
- kosher salt and ground black pepper

Instructions
- Preheat your grill or a grill pan over medium-high heat.
- Grill the husked sweet corn for about 10-12 minutes, turning occasionally, until charred and tender.
- Once the corn is charred, allow it to cool slightly, then cut the kernels off the cob.
- In a large bowl, combine the chopped romaine lettuce, charred corn kernels, sliced shallot, and lemon juice.
- Drizzle the creamy Caesar dressing over the salad and toss gently to combine.
- Top with shaved parmesan cheese, and season with kosher salt and ground black pepper to taste. Serve immediately.
Notes
For an extra smoky flavor, you can also roast the corn in the oven before slicing it. Adjust the seasoning to your taste preference.
