- 4 cups Nectarines (sliced)
- 1/2 cup Granulated sugar
- 1 tablespoon Lemon juice
- 1 tablespoon Cornstarch
- 1 cup Granulated sugar (for dough)
- 3 cups All-purpose flour
- 1 teaspoon Baking powder
- 1 cup Unsalted European butter (cold
- cubed)
- 1 large Egg
- 1 teaspoon Vanilla bean paste
- 1/2 cup Light brown sugar
- 1/2 cup Panko breadcrumbs
- 1 pinch Salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, combine sliced nectarines, 1/2 cup granulated sugar, lemon juice, and cornstarch. Mix well and set aside.
- In another bowl, whisk together 1 cup sugar, flour, baking powder, and salt.
- Add the cold, cubed unsalted butter to the flour mixture and blend until it resembles coarse crumbs.
- Mix in the egg and vanilla bean paste until the dough comes together.
- Press half of the dough into the bottom of the prepared baking dish to form the crust.
- Spread the nectarine mixture evenly over the crust.
- Crumble the remaining dough over the nectarine layer and sprinkle with brown sugar and panko breadcrumbs.
- Bake for 30 minutes or until the top is golden brown.
- Allow to cool before cutting into bars and serving.
Notes
For best results, use ripe nectarines and chill the butter before cubing it. These bars can be stored in an airtight container for up to 3 days.
