Description
This Sweet and Smoky Grilled Chicken with Peach Chipotle Sauce combines the sweetness of ripe peaches with the smoky heat of chipotle peppers, perfect for a summer barbecue.

- 4 peaches
- peeled and sliced into quarters
- 2 stalks green onion
- thinly sliced
- 1 canned chipotle pepper in adobo
- plus 2 tsp sauce from the can
- 1/2 cup freshly chopped cilantro
- 1 1/2 tsp salt
- divided
- 1 1/2 tsp ground black pepper
- divided
- 1/2 tsp cayenne pepper
- 4 boneless
- skinless chicken breasts
Instructions
- Preheat your grill to medium-high heat.
- In a blender, combine the peaches, chipotle pepper, chipotle sauce, cilantro, and 1/2 teaspoon each of salt and black pepper. Blend until smooth.
- Season the chicken breasts with the remaining salt, black pepper, and cayenne pepper.
- Grill the chicken for about 7-8 minutes on each side, or until completely cooked through and juices run clear.
- Brush the grilled chicken with the peach chipotle sauce during the last few minutes of cooking.
- Remove from the grill and let rest for a few minutes before slicing.
- Serve the chicken with additional peach chipotle sauce and garnish with green onions.
Notes
You can adjust the heat by adding more or fewer chipotle peppers to the sauce.
