Ingredients

  • 34 boneless skinless chicken breasts
  • pounded to ½ inch thickness and chopped into 1 inch pieces
  • ⅓ cup corn starch
  • 2 tablespoons oil
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • ½ white or yellow onion chopped
  • ¾ cup sugar
  • ½ cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon onion salt
  • ¼ cup ketchup
  • 1 tablespoon corn starch
  • 2 tablespoons cold water

Instructions

  1. In a bowl, coat the chicken pieces with corn starch until well covered.
  2. Heat oil in a large pan over medium-high heat, then add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same pan, add the chopped bell peppers and onion, and sauté for 3-5 minutes until they begin to soften.
  4. In a separate bowl, mix together the sugar, apple cider vinegar, soy sauce, garlic powder, onion salt, ketchup, corn starch, and cold water to make the sauce.
  5. Pour the sauce over the vegetables in the pan, stir to combine and bring to a simmer.
  6. Add the cooked chicken back to the pan, stir well to coat and cook for an additional 3-4 minutes until the sauce thickens.
  7. Serve hot over rice or noodles.

Notes

Feel free to add pineapple or other vegetables for extra flavor and texture. Adjust the sugar based on your sweetness preference.
