- 3–4 boneless skinless chicken breasts
- pounded to ½ inch thickness and chopped into 1 inch pieces
- ⅓ cup corn starch
- 2 tablespoons oil
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- ½ white or yellow onion chopped
- ¾ cup sugar
- ½ cup apple cider vinegar
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- ½ teaspoon onion salt
- ¼ cup ketchup
- 1 tablespoon corn starch
- 2 tablespoons cold water
Instructions
- In a bowl, coat the chicken pieces with corn starch until well covered.
- Heat oil in a large pan over medium-high heat, then add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same pan, add the chopped bell peppers and onion, and sauté for 3-5 minutes until they begin to soften.
- In a separate bowl, mix together the sugar, apple cider vinegar, soy sauce, garlic powder, onion salt, ketchup, corn starch, and cold water to make the sauce.
- Pour the sauce over the vegetables in the pan, stir to combine and bring to a simmer.
- Add the cooked chicken back to the pan, stir well to coat and cook for an additional 3-4 minutes until the sauce thickens.
- Serve hot over rice or noodles.
Notes
Feel free to add pineapple or other vegetables for extra flavor and texture. Adjust the sugar based on your sweetness preference.
