This Sweet Cherry Cobbler features a delightful Bing cherry filling topped with a buttery, sweet biscuit crust, perfect for a cozy dessert.

- 4 cups pitted bing cherries frozen or fresh
- 1/4 cup water
- 1 1/2 TBSP cornstarch
- 1/3 cup sugar
- 1–2 teaspoons lemon juice to taste
- 1 cup flour
- 1 tsp baking powder
- 1/4 cup +2 TBSP sugar divided
- 3 TBSP cold butter
- 2 TBSP buttermilk
- 1 egg
Instructions
- In a saucepan, combine the bing cherries, water, cornstarch, sugar, and lemon juice. Cook over medium heat until the mixture thickens and starts to bubble, about 10 minutes.
- Preheat your oven to 350°F (175°C). Pour the cherry filling into a greased baking dish.
- In a bowl, mix the flour, baking powder, and 1/4 cup of sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in buttermilk and egg until just combined.
- Drop spoonfuls of the biscuit topping over the cherry filling. Sprinkle the additional 2 tablespoons of sugar on top.
- Bake for 30 minutes or until the topping is golden brown and cooked through. Let it cool slightly before serving.
Notes
Serve warm with vanilla ice cream for an extra treat. Adjust the lemon juice based on cherry sweetness.
