Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup pineapple juice
  • 1 can 8 oz pineapple chunks drained
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 3 cloves garlic minced
  • 1 tablespoon cornstarch + 2 tablespoons water
  • 1 red bell pepper thinly sliced
  • ½ teaspoon ground ginger
  • Salt & pepper to taste
  • Cooked rice for serving
  • Green onions & sesame seeds for garnish

Instructions

  1. Place the chicken in the crock pot.
  2. In a bowl, mix pineapple juice, drained pineapple chunks, soy sauce, brown sugar, garlic, ground ginger, salt, and pepper.
  3. Pour the mixture over the chicken in the crock pot.
  4. Cook on low for 4 to 6 hours or high for 2 to 3 hours, until chicken is cooked through.
  5. Remove the chicken, shred it and return it to the crock pot.
  6. Mix cornstarch with water and stir into the sauce to thicken.
  7. Add sliced red bell pepper and cook for an additional 30 minutes.
  8. Serve over cooked rice and garnish with green onions and sesame seeds.

Notes

For added flavor, marinate the chicken in the sauce for a few hours before cooking, and feel free to add vegetables of your choice.
