- 2 lbs boneless skinless chicken breasts or thighs
- 1 cup pineapple juice
- 1 can 8 oz pineapple chunks drained
- ½ cup soy sauce
- ½ cup brown sugar
- 3 cloves garlic minced
- 1 tablespoon cornstarch + 2 tablespoons water
- 1 red bell pepper thinly sliced
- ½ teaspoon ground ginger
- Salt & pepper to taste
- Cooked rice for serving
- Green onions & sesame seeds for garnish
Instructions
- Place the chicken in the crock pot.
- In a bowl, mix pineapple juice, drained pineapple chunks, soy sauce, brown sugar, garlic, ground ginger, salt, and pepper.
- Pour the mixture over the chicken in the crock pot.
- Cook on low for 4 to 6 hours or high for 2 to 3 hours, until chicken is cooked through.
- Remove the chicken, shred it and return it to the crock pot.
- Mix cornstarch with water and stir into the sauce to thicken.
- Add sliced red bell pepper and cook for an additional 30 minutes.
- Serve over cooked rice and garnish with green onions and sesame seeds.
Notes
For added flavor, marinate the chicken in the sauce for a few hours before cooking, and feel free to add vegetables of your choice.
