- 1 cup milk
- ⅓ cup melted butter
- 1 cup mashed sweet potato
- ⅓ cup honey
- 3 tablespoons softened butter
- pinch of salt
Instructions
- Preheat your oven to 400°F (200°C) and grease an 8-inch square baking dish.
- In a large bowl, mix the cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt together.
- In another bowl, whisk the eggs, milk, melted butter, mashed sweet potato, and honey until well combined.
- Pour the wet ingredients into the dry ingredients, stirring until just combined.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While the cornbread is baking, prepare the honey butter by mixing the softened butter and pinch of salt together, then stir in the honey.
- Once baked, allow the cornbread to cool slightly before serving with the honey butter spread on top.
