- ¾ cup brown sugar (150g)
- ½ cup unsalted butter (113g)

- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- Optional mix-ins: ½ cup chocolate chips (85g)
- ½ cup chopped walnuts
- or ½ cup dried cranberries
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the mashed sweet potato, egg, vanilla extract, baking soda, cinnamon, and salt to the mixture. Stir until well combined.
- Gradually add the all-purpose flour, mixing until just incorporated. If desired, fold in any optional mix-ins.
