- 1 teaspoon cumin

- 5–6 cups shredded kale
- 1 cup mixed herbs: basil

- 2 Persian cucumbers
- chopped
- 1 avocado
- sliced
- 3/4 cup crumbled feta cheese
- Honey Mustard Dressing: 1/3 cup extra virgin olive oil
- 2 tablespoons dijon mustard
- 1 tablespoon stone ground mustard
- 3 tablespoons honey
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons champagne or apple cider vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the sweet potato matchsticks and chickpeas with olive oil, sesame seeds, chipotle chili powder, smoked paprika, onion powder, cumin, salt, and pepper. Spread them on a baking sheet in a single layer.
- Bake for 25-30 minutes, or until sweet potatoes are tender and chickpeas are crispy, stirring halfway through.
- While the sweet potatoes and chickpeas are roasting, prepare the honey mustard dressing by whisking together olive oil, dijon mustard, stone ground mustard, honey, tahini, lemon juice, and vinegar in a bowl.
- In a large bowl, combine the shredded kale, mixed herbs, chopped cucumbers, and avocado.
- Once the sweet potatoes and chickpeas are done, let them cool slightly before adding to the salad.
- Drizzle with honey mustard dressing and toss everything together gently.
- Top with crumbled feta cheese before serving.
