This Sweet Potato Mousse is a creamy, decadent dessert that combines the natural sweetness of sweet potatoes with the richness of coconut cream. Perfect for a satisfying treat!

- 3 cups diced sweet potato
- cooked
- 14 oz. coconut cream
- cream only
- 1/3 cup maple syrup
- 2 tbsp coconut sugar
- 1 1/2 tsp cinnamon
- 4 egg whites
- 1/4 tsp cream of tartar
- 3 tbsp cane sugar
Instructions
- In a blender or food processor, combine the cooked sweet potato, coconut cream, maple syrup, coconut sugar, and cinnamon until smooth.
- Taste and adjust sweetness if necessary, then pour the mixture into serving dishes and refrigerate for at least 30 minutes.
- For the meringue (if using), preheat the oven to 200°F (90°C).
- In a mixing bowl, beat the egg whites with the cream of tartar until soft peaks form.
- Gradually add in the cane sugar while continuing to beat until stiff peaks form.
- Pipe the meringue onto a baking sheet and bake for 1-2 hours until dry.
- Serve the chilled sweet potato mousse topped with meringue, if desired.

For added flavor, consider topping with chopped nuts or a drizzle of chocolate sauce.
