Description

This Sweet Potato Mousse is a creamy, decadent dessert that combines the natural sweetness of sweet potatoes with the richness of coconut cream. Perfect for a satisfying treat!


Ingredients

  • 3 cups diced sweet potato
  • cooked
  • 14 oz. coconut cream
  • cream only
  • 1/3 cup maple syrup
  • 2 tbsp coconut sugar
  • 1 1/2 tsp cinnamon
  • 4 egg whites
  • 1/4 tsp cream of tartar
  • 3 tbsp cane sugar

Instructions

  1. In a blender or food processor, combine the cooked sweet potato, coconut cream, maple syrup, coconut sugar, and cinnamon until smooth.
  2. Taste and adjust sweetness if necessary, then pour the mixture into serving dishes and refrigerate for at least 30 minutes.
  3. For the meringue (if using), preheat the oven to 200°F (90°C).
  4. In a mixing bowl, beat the egg whites with the cream of tartar until soft peaks form.
  5. Gradually add in the cane sugar while continuing to beat until stiff peaks form.
  6. Pipe the meringue onto a baking sheet and bake for 1-2 hours until dry.
  7. Serve the chilled sweet potato mousse topped with meringue, if desired.
