Ingredients

Scale

1 large sweet potato

peeled + cubed

1 tbsp olive oil

1 tsp smoked paprika

Salt & pepper to taste

½ lb ground beef (or turkey/lentils)

1 tbsp taco seasoning (or homemade: see tip!)

½ cup pico de gallo

¼ cup guacamole

2 tbsp sour cream (or dairy-free alt.)


Instructions

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the cubed sweet potato with olive oil, smoked paprika, salt, and pepper.
  • Spread the sweet potato on a baking sheet and roast for about 25 minutes or until tender.
  • While the sweet potatoes are roasting, brown the ground beef (or turkey/lentils) in a skillet over medium heat, adding the taco seasoning once browned.
  • Once everything is cooked, assemble your taco bowl by layering sweet potatoes, meat mixture, pico de gallo, guacamole, and sour cream.
  • Serve warm and enjoy!

Notes

For a vegetarian option, use lentils instead of meat. You can also make your own taco seasoning for customization.
