- 1 pound ground beef or turkey
- 1 medium onion diced
- 2 cloves garlic minced
- 1 packet taco seasoning (about 1 ounce)
- 1 can (14 ounces) diced tomatoes undrained
- 1 can (15 ounces) black beans drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup sliced black olives (optional)
- 1/4 cup chopped fresh cilantro (for garnish)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef or turkey over medium heat until browned, adding the diced onion and minced garlic until softened.
- Stir in the taco seasoning, diced tomatoes, black beans, and corn. Season with salt and pepper to taste.
- In a greased baking dish, layer half of the meat mixture, followed by half of the sour cream and half of the cheddar cheese. Repeat the layers.
- Top with sliced black olives if using and the remaining cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
