  • 1 pound ground beef or turkey
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning (about 1 ounce)
  • 1 can (14 ounces) diced tomatoes undrained
  • 1 can (15 ounces) black beans drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned, adding the diced onion and minced garlic until softened.
  3. Stir in the taco seasoning, diced tomatoes, black beans, and corn. Season with salt and pepper to taste.
  4. In a greased baking dish, layer half of the meat mixture, followed by half of the sour cream and half of the cheddar cheese. Repeat the layers.
  5. Top with sliced black olives if using and the remaining cheddar cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Garnish with chopped cilantro before serving.
