- 1 yellow onion

- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 ¼ cups uncooked long-grain white rice
- 14.5 ounces canned diced tomatoes

- 3 cups beef broth (or chicken broth)
- 2 cups shredded Colby Jack cheese (or cheddar

- Optional toppings: shredded lettuce

Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent.
- Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for 2 minutes until fragrant.
- Mix in the uncooked rice, diced tomatoes (with juice), chopped green chilies, and beef broth. Bring to a simmer.
- Transfer the mixture to a greased 9×13 inch baking dish. Cover with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
- Serve hot with optional toppings like shredded lettuce, sour cream, avocado, or chopped cilantro.
Notes
Adjust the chili powder to increase or decrease the spice level according to your preference.
